Edinburgh's New Town was so well planned in Georgian times that, together with the Old Town, it's a UNESCO World Heritage Site. Built in the 1820s as three townhouses, the Howard has a small restaurant, the Atholl, with a marble fireplace, smartly-dressed tables and fresh flowers. It only seats 14, so do book. The food often declares its provenance, as in Arbroath Smokies, horseradish mousse with rustic oatcakes, and Newtonmore venison loin, braised red cabbage, honey-roast parsnips, mash and whisky jus. Some things travel from south of the border, like the Maldon sea salt that accompanies apple pie, caramel sauce and vanilla ice cream.
