Martin Wishart is a shining star of the Scottish restaurant firmament, his self-named restaurant in Leith his flagship. Here, he's brought his dedication to high quality and his attention to detail to French brasserie classicism. There's a contemporary sheen to the place and executive chef, Rikki Preston displays a dedication to Scottish produce that proves the Auld Alliance is alive and well. A starter of marinated sea bream with pickled kohlrabi, wasabi bavarois and bergamot is a bracing opener. For main, there are charcoal-grilled 28 day dry-aged steaks, as well as dishes like confit rabbit à la moutarde, chantenay carrots, braised cabbage and Parmentier potatoes, and then to follow vanilla crème brûlée or carrot cake.
