Can there be another hotel that uses its profits to help train the world's would-be surgeons? That is what this part-Georgian, part-new hotel owned by The Royal College of Surgeons of Edinburgh does. If you're thinking of trying Scotland's classic dishes for the first time, then head for the elegantly decorated and furnished restaurant for a starter of oak-smoked Scottish salmon, dressed crab, fennel and dill aioli. Follow with 8oz prime Scotch beef fillet served with fries, mushroom, tomato and a choice of sauces. Finish with a mulled wine spiced soufflé and orange sorbet.
