Can there be another hotel that uses its profits to help train the world's would-be surgeons? That is what this part-Georgian, part-new hotel owned by The Royal College of Surgeons of Edinburgh does. If you're thinking of trying Scotland's classic dish for the first time, then head for the elegantly decorated and furnished restaurant for a starter of haggis pastilla with neep (turnip) fondant, mashed potato and whisky jelly. Follow with braised and pressed pork belly with red onion purée, buttered mash and black pudding, or seared Scottish salmon with smoked haddock foam, Jersey Royals, burnt pickles and onions. Finish with vanilla pannacotta, rhubarb sorbet and jelly.
