La Garrigue is the name given to the wild, herb-scented scrubland in Provence and Languedoc in the south of France. Chef-patron Jean-Michel Gauffre (who hails from down that way) has brought the region's honest rustic cooking to his smart neighbourhood restaurant in Edinburgh's old town. Expect regional cooking delivering full-bore flavours, starting with pork, rabbit and apple terrine with celeriac remoulade, then fish of the day might be red snapper with aïoli lentils. Gauffre was born in the heartlands of cassoulet so his take on the rich stew of belly pork, duck confit, Toulouse sausage and white beans is the real deal.
