Jian Wang opened Chop Chop in 1997 with the intention of supplying jiaozi, the traditional dumplings of her native Dongbei (in northeast China) to an unsuspecting UK public. Essentially a dim sum format, the menus feature little bites full of savoury intensity, textural variety and spice. Fried pork and prawn guo tie (pot-stickers) are wonderful dipped in rice vinegar and soy, while the boiled items include beef and chilli, lamb and leek, and chicken. Other successful orders are crispy squid in sesame seeds and lemongrass, cumin-seeded lamb, and sides such as gingery bean sprout salad, and garlic-fried aubergine. Finish with Mongolian fried dumplings, non-traditionally filled with chocolate ice cream.
