The bracing seafront of dear old Eastbourne fits this sparkling-white hotel like a glove, the marine views a treat from the conservatory dining room. While old-fashioned courtesies abound, the kitchen doesn't just stick to heritage Englishry, although you can go from potato and herb soup to sirloin and chips, with syrup sponge and custard to finish, if you've a mind. In between, though, there are wood pigeon salad with pickled mushrooms and roasted beetroot, nori-wrapped monkfish with spiced mussels, and cinnamon-infused fruity lamb tagine with orange, prunes and apricots. Things end on an upbeat with good pastry work in a pear frangipane tart, served with honey and ginger ice cream.
