First licensed in the Regency era, Sarah and Tony Lethbridge have given this stone-built inn a thoroughly modern makeover, though not to the detriment of its original charm. Sarah heads up the kitchen, capitalising on West Country produce, as well as drying and curing meats in-house. The style of cooking looks beyond Britain, offering a Spanish-influenced starter of chargrilled asparagus, Serrano ham and poached duck egg, perhaps followed by pan-seared brill, warm salad of Jerusalem artichokes, fennel, broad beans, radish, salsa verde and new potatoes. Treacle tart is a dessert with Blighty stamped all over it.
