The name is not a reference to a seafaring friar, but rather the building's 16th-century role as a store for the salt the monks traded at Exeter Cathedral. The Garden Room restaurant makes a smart yet understated backdrop for unpretentious cooking. To begin, try roasted nut, sunblush tomato and cream cheese cappelletti served on tomato sauce with a parmesan crisp, or maybe pan-fried duck livers and bacon topped with a crispy egg nest. Main course offers a medallion of steak with braised brisket topped with horseradish-filled ravioli, or a medley of brill and salmon. To finish, a warm toffee apple and custard tart comes with a spiced baked apple sorbet.
