In the idyllic village of Knowstone, this thatched 13th-century country inn is set deep in the lush countryside on the Devon and Somerset border. Mark Dodson once cooked under Michel Roux at Bray, which might explain the flair and precision evident in the kitchen. A salad of smoked duck and duck liver parfait, rhubarb chutney and brioche toast shows a strong skills set. For main course, well-timed fillets of John Dory might turn up with crab risotto, bouillon and mange-tout tempura. Honey pannacotta, roasted pistachio and honeycomb and pistachio ice cream ends a meal with a flourish.
