On the fringes of Exmoor National Park, just a short, pretty drive to the north coast, Kentisbury Grange is a former Victorian manor lovingly morphed into classy boutique hotel. The old manor’s coach house was not forgotten in the transition and has been turned into a stunning restaurant, and with its kitchen under the guidance of Michael Caines, it’s quite the dining destination. The impressive space is contemporarily rustic, with a stylish bar on the first floor and tables outside for when the mercury has risen in north Devon. Regional ingredients get a good outing on menus that show intelligent flavour combinations in the modern British manner. A first course squab pigeon comes with beetroot tartare and preserved blueberries, while crab ravioli has spikes of lemongrass and ginger, and a full-flavoured crab bisque. Among main courses, Cornish sea bass stars with hay-roasted Jerusalem artichokes and a hit of truffles, and slow-cooked pork tenderloin arrives with white pudding purée. Apple and blackcurrant soufflé with Granny Smith apple sorbet is a fine, fruity finale.
