What looks like a rural pub on the outside is an elevated country hotel within, with lavish traditional furnishings and a large dining room. The kitchen offers a traditionally based Anglo-French repertoire founded on quality materials. First off could be a grilled John Dory fillet on creamed lentils with brown shrimps and a scallop fritter, the overture possibly to pork tenderloin with chicken mousseline in a sauce of Cornwall's Rattler cider. There's a gentle richness to the impact of dishes, seen in Aylesbury duck with dauphinoise and rhubarb in peppercorn sauce, and most temptingly of all in dark chocolate terrine with marinated orange and Amaretto ice cream.
