The Merchant’s Yard is in the centre of the Peak District in the village of Tideswell. The restaurant is found tucked away in a traditional stone building. Set on two levels, the atmosphere is one of relaxed dining with local produce given a global treatment. Flavours shine through and ingredients are treated with respect, as in a starter of scorched Cornish mackerel, cucumber, horseradish and apple. Follow it with a pork fillet, sausage roll, chorizo jam, king oyster, cardamom purée, Thai asparagus, radish and apple sauce. Coconut pannacotta, pineapple, pistachio macaron, passion fruit and chilli sorbet is a typical dessert.
