In a Victorian cotton mill beside the fast-flowing River Leven, the restaurant is a welcoming room with exposed stone walls. To start might be a warm salad of red mullet with Niçoise vegetables, tapenade and sardine vinaigrette, or flavour-packed oxtail and smoked ham hock terrine, served in a neat cylinder with pickled vegetables and horseradish dressing. Main courses are given an extra dimension by sauces: a glossy, rich red wine jus for pan-fried monkfish tail in a pleasingly piquant crust of chorizo and rosemary, and one of Madeira and summer truffle for fillet of beef with wild mushrooms and vegetables. For pudding, try prune and pistachio parfait.
