The Earl of Cadogan picked a cracking spot for his hunting lodge in 1870, in two acres of riverside gardens with sublime Grasmere views. These days, this plush hotel treats guests to ambitious contemporary cooking in the Signature Restaurant, where atmospheric lighting and an airy conservatory add up to an elegant setting for reworked interpretations of classic flavour combinations. Start with Blackdub blue cheese mousse with pickled apple purée, candied walnut and celery, then main-course lamb might deliver slow-cooked shoulder, saddle and sweetbreads with Jerusalem artichoke, heritage potatoes and capers. End with dark chocolate tart with Kahlua mousse, chocolate sorbet and orange brittle.
