A thorough makeover has added a chic, contemporary look to this 18th-century coaching inn on Brough high street, and the kitchen toes that up-to-date line with switched-on modern ideas. A penchant for local and regional supplies drives the menu, kicking off with an exemplary cheese and onion soufflé matched with cider and onion velouté, then more of those assertive flavours arrive in a main course of slow-cooked pork belly with black pudding bonbons, apple sauce, creamy mash and red wine jus. They do a fine soufflé here, so why not wind things up with a chocolate version paired with buttermilk ice cream and honeycomb?
