Druids Glen boasts the full package of spa, golf and leisure facilities with the Wicklow hills thrown in as a backdrop. Stylishly decorated in muted hues, with a feature fire set in a huge granite hearth, the main dining room is Hugo's Restaurant, an impressive arena for the kitchen's French-accented modern Irish repertoire. Tee off with roasted quail breast, spelt and barley risotto, squash and burnt onion, then follow with pan-seared halibut fillet, crispy chicken wing, shallots, spinach and chicken jus or roast poussin, baked potato mash, leeks, hazelnuts and morel sauce.
