A Georgian rebuild following Cromwell's calamitous intervention in Ireland, Dunboyne was the ancestral seat of the Butler family, its last resident a Bishop of Cork. Stucco plasterwork and ceiling frescoes are worth a gander as you pass through the public spaces on the way to the Ivy Restaurant, a pleasantly contemporary space with smart linen and yellow and green notes in the upholstery. The up-to-date country-house cooking has plenty to entice, starting with the modern classic pairing of scallops and smoked black pudding, before venison loin with braised red cabbage in sauce poivrade, and then baked morello cherry cheesecake with clotted cream.
