Originally built as a Christian Brothers monastery in 1867, ceiling frescoes of the Battle of the Boyne in the interlinked dining rooms furnish a historical note that's a contrast to the modern Irish cooking. Start with salt-and-vinegar lemon sole and crispy mussels with smoked potato salad, or maybe foie gras parfait with pistachio butter and chocolate oil, before pedigree main-course meats bring on rump and braised shoulder of Kerry lamb dressed with garlic purée and mint jelly in red wine jus, or chicken breast and maple-syrup wings with sage and onion polenta and truffled feta terrine. Praline soufflé with pumpkin ice cream and hazelnuts is an interesting way to finish.
