If you want to play at being aristocracy for a day, a stay at Mount Juliet should do the trick. The imposing Georgian manor-house hotel stands in a sprawling estate where boredom is kept at bay by river and lake fishing, woodland strolls, a Jack Nicklaus-designed golf course, plus shooting and spa pampering. The focus for gastronomes is the Lady Helen dining room, an opulent space with splendid plasterwork ceilings, views over the grounds, and a discreetly muted decor. Wild game from the estate and named local producers get full credit, whether you order from the carte or take on the tasting menus, whose simple descriptions don't tell the full story of what's going on in the intricate dishes. Seared scallops and smoked eel are offset by charred, pickled and puréed carrot and charred orange in a well-balanced starter. Main course brings rose veal of exemplary quality and depth of flavour, partnered with girolles, peas, and roast potato foam. There’s crafty and attention to detail in fish dishes too – perhaps cod served with parsley, salted lemon, mussels, and a savoury chicken jus to give the tastebuds a thorough workout. The multi-faceted approach continues into a dessert that plays with textures on a citrus theme, together with avocado and champagne foam.
