It isn't just golfing and spa treatments at the Mount Juliet Hotel – archers and falconers are looked after too. It all seems a fitting role for a grand Georgian country house, once owned by the late Lady Helen McCalmont, in whose honour the fine dining restaurant has been named. Windows give on to the grounds in a gentle arc in a room done in restrained taupe tones, where produce from the estate finds its way into modern Irish cooking of impressive reach. A seductive starter could be silky-textured truffled potato ravioli with a duck egg yolk and hazelnuts, or there could be sea-fresh king crab and mussels with rouille in rockfish sauce. Main-course meats are top-drawer, with local rose veal or venison from Wicklow among the options, the latter accompanied by beetroot, black trompettes and the scent of juniper, while brill fillet might be teamed with baby gem, Jerusalem artichoke and Alsace smoked bacon. Technical wizardry at dessert stage produces a combination of 70% chocolate ganache with compressed streusel crumbs and raspberry sorbet, or poached rhubarb with lovage ice cream and olive oil sablé.
