Not far from the Rings of both Kerry and Beara, Sheen Falls maintains a refined tone in its La Cascade restaurant, enhanced by informed staff. Home-smoked salmon, superb seafood and organic produce distinguish the output. This takes a classical French line with soft-textured duck liver parfait to start, copiously garnished with caramelised figs, quince and red fruit compôte, , before main courses that might feature perfectly timed fish, perhaps roast halibut with provençale vegetables in bouillabaisse sauce. Meats might include rack and shoulder of Kerry lamb with mint foam and gnocchi. Irish farmhouse cheeses or shortbread-based lemon tart with blackcurrant sorbet close the deal.
