It isn't possible to get much further west on the European continent than here. The Dingle Skellig is a sprawling establishment right on the coast with glorious views all round, best enjoyed from the Coastguard restaurant with its capacious picture windows. The kitchen draws on excellent regional produce, with locally landed fish and Kerry lamb among the highlights. Its modern Irish repertoire runs to salmon cured in Dingle whiskey with radish, cucumber and crème fraîche, followed by honey-roast duck breast with griottes and bok choy, or roast hake with samphire, squash and preserved lemon in white wine cream. Finish with praline, pistachio and white chocolate cheesecake.
