The 42,000-acre estate of this Victorian hunting lodge overlooking Camus Bay plays its part in supplying Screebe House’s kitchen with seasonal game, while local boats take care of the fishy stuff. As you settle in for multi-course dinners, forget any idea of staid country house fare – this is innovative, contemporary cooking: warm smoked eel sitting happily with potato foam, crispy onion and the bitter astringency of puréed scurvy grass. Next up, pan-fried quail breasts served with Leinster cheese fondue, crunchy asparagus and gem lettuce, or monkfish and mussels in chive butter sauce with charred spring onions and meltingly unctuous lardo are a masterclass in balance and technique.
