Formerly Glenarde House, the Ardilaun was built in 1840 for the Persse family, Galway landowners of some grandeur. It was launched as a modern hotel in 1962, and the Bistro is its venue for dynamic modern Irish cooking of vaulting ambition. Dishes are complicated but make an impact, as when cider-cured sea trout arrives with avocado purée, sea-salted egg yolk shavings and horseradish crème fraîche. That might precede hot-smoked pheasant with its leg en pithivier, alongside cavolo nero and bacon in a smoked garlic and thyme jus. Sweet potato beignets are a dessert, as you might guess from their accompaniments of espresso mousse and clementine.
