In Seaham Hall's sleek Ozone Restaurant floor-to-ceiling windows and a wraparound outdoor terrace giving heavenly garden views act as a backdrop to the light and zingy fusion food sent from the open kitchen. Confit duck pancake with hoi sin sauce, crisp lettuce and cucumber makes a great starter, or crispy squid with coriander and sweet chilli might appeal, ahead of main courses such as Thai prawn curry or tempura cod with roast peanuts and Thai shallot and apple salad. For dessert, coconut pannacotta with roasted pineapple keeps things suitably oriental. Byron's Bar & Grill is the alternative spot for grill dining in sleek surroundings.
