These days a state-of-the-art spa hotel, the late-18th-century Seaham Hall also offers a brace of stimulating eating options. Byron's Restaurant is a swish contemporary space with a glossy sheen that offers a great meeting place. The kitchen delivers a crowd-pleasing menu aiming unashamedly at the hearts of carnivores, although well-sourced fish provides meat-free alternatives. Expect the likes of slow-cooked pork jowl and cheek with piccalilli, crisp toast and pork scratchings to start, followed by North East cod, spiced aubergines, borlotti beans and samphire. Lemon pannacotta, pistachio sponge and raspberry is one of the uncomplicated desserts.
