Ballyliffin Lodge has ditched the 'faine daining' approach in Jacks Restaurant, and the new look - brown leather seats and banquettes, bare tables and dark wood floors - backed by a pubby bar and an unbuttoned menu are a hit with the guests. There's a clear penchant for oriental accents in starters such as Thai salmon fishcakes, but there's a strong showing of regional flavours too: pan-seared fillet of local beef, say, with caramelised onion mash, wild mushrooms and pancetta jus, or pork fillet with apricot and pine nut stuffing and apple and Calvados cream. Round off with milk chocolate and lavender crème brûlée.
