As well as a golf course and spa, you'll find turrets and ramparts at this fabulous country-house hotel. Formal dining takes place in the Earl of Thomond restaurant, a spectacular room filled with antiques, oak-panelled period character and a resident harpist. The cooking fits the bill with its unmistakably French accent and top-notch produce, from the estate and local suppliers. Service is formal and everything looks wonderful on the plate. You might start with wild mushroom and celeriac risotto and then perhaps try the roast wild duck breast with apple and vegetable quinoa and calvados sauce. Opt for a brown bread soufflé with Bailey's ice cream to finish.
