With lakes, rivers and ancient oak forests all over the 1,300-acre, 16th-century estate, it's easy to work up an appetite at this historic stately home that is now an upmarket country hotel. Clever use of plush drapes and screens softens the capacious space of the Botanica Restaurant, and the kitchen treats local ingredients with French-inspired flair. Spicy tiger prawns, orange and dill-infused salmon, and smoked mackerel rillettes make up a seafood platter, then roast rack and slow-cooked rump of local lamb is delivered with aubergine caviar and buttery potato mash. Dessert could be a riff on lemon, in the shape of a zesty tart, madeleines, and jelly.
