The Arboretum Restaurant in the old White House part of the hotel is a classy, contemporary space done out in a fashionably muted palette. The menu here treads an uncomplicated modern path, keeping step with the seasons and making good use of regional ingredients. Get things going with the timeless comfort of chicken liver parfait with fig chutney and brioche, followed by pan-roasted cod with crispy ham, crushed potatoes, mange-tout and white wine sauce. For more casual eating, there's Acorns Brasserie and the Parkland Terrace, whose views over the Pentewan Valley make it a fine spot for a pre-dinner cocktail.
