With the Peaks as a backdrop beyond the grounds of this grand Georgian building, the elegant and spacious Oakridge dining room matches the classical culinary approach of the kitchen. Chicken liver parfait, pear and almond relish and toasted ciabatta is a well-executed classic and it might precede a more globally influenced slow-cooked soy and honey belly pork, sweet potato mash, chilli roasted tender-stem broccoli and ginger jus. Pan-fried trout fillet with warm Niçoise salad, truffle potatoes and tartare cream is a more European route at main course. Finish with dark chocolate and mint marquise with grapefruit sorbet.
