The Queen, a Victorian railway hotel, has been given an eye-popping makeover to shake out any cobwebs, with much use of loudly patterned fabrics. There are three restaurants, the principal one being a sleek wood-floored space with kitchen views. The cooking style is modern brasserie, with quality ingredients treated with respect in vigorously flavoured dishes. A trio of scallops sitting on cushions of creamy brown shrimp risotto looks the part, and may be the curtain-raiser to herb-crusted lamb rump, served with champ in a forthright rosemary jus. Indulgence arrives in the finale of treacle frangipane tart with egg custard ice cream, made with eggs from a local Cheshire farm.
