Drovers of old began their long treks to Midlands and London markets from Tregaron, no doubt first fortifying themselves in this part-17th-century inn. Through the pillared front doorway there's a bar one side and a restaurant the other, with chunky oak tables and bilingual, wide-choice menus. Fried scallops, fennel purée and orange and cardamom caramel is an excellent starter. Then try roast fillet of hake with confit potatoes, baby gem lettuce, smoked bacon velouté and crisp pancetta, or maybe braised Welsh lamb neck and root vegetable shepherd's pie with braised red cabbage. And finally, a lightish egg custard and griottine cherry tart with dark chocolate sorbet.
