An Italianate mansion built in verdant countryside, Falcondale has 14 acres all to itself. It's the kind of country-house hotel that delivers peace and quiet and that getting-away-from-it-all vibe. The dining room has a traditional finish, but a dash of contemporary style. The cooking reveals classical roots, but this is gently modernised stuff, and good use is made of the regional bounty. Wood pigeon is served as a starter with spinach and mushrooms, while among main courses there might be a trio of Welsh pork served with apple and red cabbage, or gnocchi with textures of mushrooms and hazelnut. To finish, strawberry frangipane comes with granola and Chantilly cream.
