If you like striking contemporary surroundings and estuary views, the restaurant of this bijou Victorian mansion is the place to be. The kitchen's general approach is fresh and modern. Starter might be an open-seared pigeon pie with puréed spinach and a side jug of pouring carrot jus. As you'd hope, fish is deftly handled: line-caught sea bass is paired with a prawn raviolo, fennel purée and a white wine reduction. An apple-centric dessert presents the fruit in the form of iced 'lipstick', sponge, doughnut, profiterole and sorbet. It's all delivered via daily market menus and a seasonal carte.
