Just off the M11 outside Cambridge, the Red Lion can trace its history back to the early Edwards, as is evidenced by its low-slung timbered façade and beamed interiors. Winter warmth radiates from the brick fireplaces, and staff are a model of friendly efficiency. English pub stalwarts are the backbone of menus that deal in Suffolk asparagus of both colours, dressed in good hollandaise and a poached egg, followed by crunchy beer-battered cod with spinach purée, crushed peas, and chips in a Jenga-style stack. Fine technique distinguishes a proudly risen banoffee soufflé with caramelised banana and toffee sauce.
