Here, in an immaculate house on the edge of Bray, expect classic Italian stuff made with (mostly) British ingredients. Among antipasti, deep-fried courgette flowers are filled with ricotta and basil, seared Scottish scallops arrive with a Jerusalem artichoke cream, pancetta and some slivers of black truffle, and cured hams are shipped over from the motherland. Pasta courses include tagliolini with Cornish crab, and pappardelle with duck and a rich red wine and tomato ragù. Follow on with a classic cacciucco - seafood casserole - with squid, gurnard, clams and mussels, or pan-fried calves' liver with sage and an olive oil mash. Traditional desserts might include Sicilian lemon tart.
