In a stylish, contemporary space of chrome and glass, the cooking matches the modernity of the setting, delivering a genuine Irish flavour and some creative combinations. An opener of roast cauliflower and aged parmesan risotto is partnered with Ryan's Farm black pudding and tarragon, while another sees Portavogie crab paired with warm whiskey maple-cured salmon in a bouillabaisse. For mains, try roast duck breast with vanilla and butternut squash and an orange and port sauce or perhaps a crisp confit duck leg in poached Armagh pear with blue cheese and salted walnuts. To finish, choose from a range of desserts, or go savoury with the French and Irish cheeses.
