Tranquilly set in 17 acres of gardens, this country-house hotel was built in the late 19th century slap-bang on the shore of Asknish Bay with jaw-dropping views over to Jura and other islands. Pheasant, duck, quail and black pudding go into a terrine set off by a port reduction and pear and saffron chutney, followed perhaps by braised shin of beef with pan-fried mignon of fillet served with girolles, roast shallots, potato cakes and red wine jus. Resourceful seafood dishes include grilled mackerel fillet with barigoule and fennel purée, and pan-fried fillet of sea bass with saffron potatoes, mussels, spinach and tapenade. To finish, fly the Scottish saltire with cranachan.
