Standing on the shore of Loch Long, this much-altered Victorian house is a period treat inside, with a billiard room, intricate wood panelling and magnificent stained windows in the dining room. Gloved staff serve modern Scottish food that embraces modern techniques, from a starter of guinea fowl roulade with potato dauphine, sherry vinegar pearls and game jus, to a main dish of half a Scottish lobster with saffron aïoli and a lobster and caviar emulsion. Meat lovers might choose pork fillet in a cider jus or roast lamb cannon with basil-crushed potatoes. Similar multi-layering informs desserts such as iced grapefruit soufflé with blood-orange curd and chocolate biscotti.
