Menus reveal classical sensibilities and a contemporary touch. Start with a terrine made with rillettes of confit chicken, looking pretty as a picture on a vibrant apricot purée, and topped with a crispy black pudding bonbon. Next up, beef appears fashionably in two ways - sirloin and slow-cooked featherblade - in a dish that marries flavours and textures. Flavours hit the mark when it comes to desserts, too, with a pannacotta alongside tropical fruit salsa and a suitably sharp lime sorbet.
