Situated on the Scottish Riviera, officially recorded as one of the sunniest and driest places in the UK, this former watermill has acquired windows, panelling and a beautiful door from a demolished stately home across the Moray Firth. There’s a wide choice of food, from 12-hour slow-roasted belly of pork to feta cheese and spinach tart; and pan-fried sea bream with pea and broad bean gnocchi to roast loin of venison with pommes Anna, red cabbage, black kale and ‘gin and tonic’ scented chocolate jus. There’s an ever-changing selection of Scottish real ales at the bar; over 30, all through hand pumps, can be tried during the June beer festival.
