Part of the Ribble Valley Inns group, The Highwayman is a stylishly appointed 18th-century coaching inn with craggy stone floors, warm wooden furniture and log fires. Wainwright is the real ale, Kingstone Press supplies draught cider, and wine expert Craig Bancroft chooses the extensive wine list of which 10 are served by the glass. Sitting in Lancashire but only a few miles from the Cumbrian and Yorkshire borders, the inn has won a Green Tourism award and also an AA Rosette for its use of local and regional ingredients. New head chef Matthew Lees has a passion for cooking rustic dishes with fresh produce. Expect dishes like fish pie served with cheesy mash; another pie, made with Cumbrian lamb shanks and topped with butter puff pastry, is accompanied by rosemary and sea-salt potato wedges. Butterflies and birds love the terraced gardens, where there is comfortable seating and outdoor heating.
