The name gives a little clue as to the other-worldly grandeur of the setting, a lavishly appointed dining room at the Waldorf Astoria with hand-blocked floral wall designs, a gigantic oval mirror, and views through half-moon windows towards the Castle. Here, the Galvin brothers have made themselves a very comfortable home north of the border, and the menus, which embrace multi-course specials with vegetarian counterparts, as well as a shorter seasonal offering and the standard carte, deal in modern Anglo-French dishes of impact and finesse. The lightest way to start could well be with a tartare of sea bream, adorned with mint-pickled cucumber and dressed with lemongrass and lime-leaf yogurt, while main courses subtly step things up with roast loin and braised shoulder of mutton, seasoned with ras el hanout and apricot, or turbot poached in dashi and partnered with an oyster and slivered radish. Incomparable pastrywork distinguishes a tart of pineapple and Malibu, served with coconut sorbet, or there could be a bang-up-to-date mousse of Manjari chocolate and praline with toasted hay ice cream and almond gel.
