The Kitchin

The Kitchin - not some glib play on words - but home to Edinburgh-born chef-patron, Tom Kitchin, whose impressive CV includes stints in the lofty kitchens of the likes of Pierre Koffmann in London and Alain Ducasse and Guy Savoy in France (Tom also appeared on BBC Two's 'Great British Menu' TV series in 2008). Set on Leith's rejuvenated waterfront, The Kitchin was once a whisky distillery and has a fine outlook on to the smart maritime piazza and stylish waterfront houses. It's a delightful modern, dining venue, with stylish grey décor, original stone pillars and high-quality furniture, together with a feature window offering views of the kitchen at work. Simple table appointments, soft lighting, highly comfortable leather seating and refreshingly informal but attentive and knowledgeable service complete the understated but upbeat package. Meanwhile, the slick, modern cooking from a dedicated team showcases a successful marriage of fresh, seasonal quality Scottish produce and classical French technique. From 'nature to plate' is Tom's strapline and cooking philosophy here. It's ambitious with impressive presentation to create a focal point on every plate; take hare from the Borders cooked à la royale and served with soft polenta, celeriac purée and tomato chutney, and to finish, perhaps chunky apple compote with a caramel parfait, chestnuts and salted almond ice cream.
