Cheese and Armagnac trolleys should provoke some pleasurable dithering, while the kitchen's focus is on a modern French approach, delivering well-presented dishes distinguished by some unusual combinations. High-quality produce and impressive skills shine throughout; think poached beef fillet with oxtail croustillante and salsify, or coconut parfait with pineapple sorbet and coconut foam.
