Bohemia Restaurant

A swish, contemporary townhouse close to the centre of town, The Club Hotel & Spa plays host to the island's most trendy, and highly rated restaurant, Bohemia, with its chef Shaun Rankin delivering some seriously accomplished cuisine. A long, trendy bar runs the length of its plate-glass windows and attracts an equally trendy crowd, and behind it sits the restaurant. Decorated in shades of earthy brown, there's lots of wood, leather, Lalique glass, fresh flowers and elegant table appointments. Service is appropriately polished and attentive, yet unstuffy, from a friendly international team (with a super restaurant manager and sommelier). A buzzing venue with a vibrant see-and-be-seen vibe. Shaun Rankin's kitchen takes a modern approach underpinned by a classical French theme; this is refined, top-notch, creative cooking at its best. Expect great use of seasonal and local produce from sea and land, bags of luxury (crab, lobster, oysters, Périgord truffles, caviar), great technical skills, lovely clean, clear flavours with fine textural combinations, and a sense of adventure. Think grilled local sea bass with scallop carpaccio, samphire, lime and sauce vièrge, or perhaps roast loin of Yorkshire venison teamed with chocolate tortellini, medjool dates and ginger-scented quinoa, and to finish, maybe a macerated raspberry and balsamic soufflé served with white chocolate fudge cannelloni. The repertoire is a fixed-price affair and includes a tasting option, while the fresh Jersey seafood proves a drawcard and peripherals - like tasters and inter-courses and fabulous petits fours - complete the experience. The hotel's Club Café upstairs serves less elaborate food, there are luxury rooms and a wonderful spa, too.
