Description
Dating from the early part of the 20th century, Baslow Hall was built in the style of a 17th-century manor house and approaching down the chestnut lined driveway it makes quite an impression on the 21st-century visitor. Located on the edge of the Chatsworth Estate, the handsome, stone-built house is set in 5 acres of beautiful gardens with hidden corners and potagers. Max and Susan Fischer have been in residence for a little over 20 years and have created a charming and elegant environment. The house is filled with well chosen antiques, pictures and fine fabrics, log fires flicker and comfortable sofas invite relaxation, while the dining room with its stylish classical appeal, complemented by fine china, cutlery and glassware, proves the real heart of the house. Max has developed a strong team in the kitchen - led by head chef Rupert Rowley - and he seeks out the best produce - if it isn't grown in the grounds - and together they apply their undoubted technical skills to provide outstanding food on the plate. The style is modern European, but underpinned by classical French technique, and results are precise and sophisticated. There is a tasting menu alongside the fixed-price carte and menu du jour. The peripheral elements from wonderful bread to amuse-bouche and pre-dessert are all part of the experience, perfectly judged, and devoured with gusto. Skill in the balancing of flavours is to the fore in a starter of terrine of foie gras with Yorkshire forced rhubarb and toasted brioche as well as main-course roast loin of veal with linguine, asparagus and finished with a rosemary cream and veal jus. Desserts such as lemon chiboust with bay leaf ice cream and lemon jelly maintain the standard to the end. Service is polished and formal, but friendly with it.

We continue to be impressed with the high standard provided, and despite sampling others, we are always drawn back to Fischer's. Food is exceptional; it is creative and varied, and our taste buds are never disappointed. There is great comfort in the bedrooms, if you wish to stay, and wonderful hospitality from the well trained and attentive staff. A superb location; a beautiful house; immaculate gardens, all within minutes of breathtaking countryside. A perfect value for money package.
