Set in 500 acres of parkland and beautiful gardens, this magnificent Palladian mansion - now a notable country-house hotel - exudes luxury. A choice of lounge areas, from the luxurious splendour of the 17th-century drawing room with its chandeliers, ornate cornicing, oil paintings and deep sofas to the atmospheric library, deliver the anticipated comforts and style. The formal dining room, in the mansion's former ballroom, is an elegant bow-fronted affair with lovely views across the estate, gardens and that avenue of trees. Well-spaced tables, crisp napery and fine glassware fit the bill, as does the attentive, professional and knowledgeable service, while chef Hywel Jones's highly accomplished, clean-cut cooking more than matches expectations. The approach is modern-focused, underpinned by a classical French theme, with great emphasis placed on sourcing high-quality seasonal ingredients. The fixed-price menus come dotted with luxury; think caramelised veal sweetbreads, lasagne of wild mushrooms, langoustines, Sauternes and rosemary foam to start, followed by loin of Brecon venison with creamed cabbage, oxtail and sloe gin sauce, or perhaps roast fillet of Cornish John Dory with braised free-range pork belly, white onion purée and baby leeks.
