Overlooking Hyde Park and the London skyline, this deluxe landmark hotel has undergone a multi-million pound refurbishment and now features former River Café head chef Theo Randall's new eponymous restaurant - which replaces the hotel's previous Le Soufflé venue. Clean lined, modern, sophisticated and relaxed, the long beige and grey dining room uses lots of natural materials like wood and leather as a backdrop to the traditional regional Italian cooking. There's also a long gleaming bar (at which diners can eat) and a visible kitchen too. Inspired by his passion for top-quality and seasonal produce, the cooking takes on a rustic-suave theme. Ingredients are cooked with great care and skill, but without unnecessary fuss in well-conceived, well-presented, balanced and clear-flavoured dishes on daily-changing menus. Take the likes of perfectly cooked pan-fried Scottish scallops to start, with parsley and Castelluccio lentils, perhaps a main course of wood-roasted turbot on the bone, with parsley, anchovy and new season asparagus, and to finish, maybe a Meyer lemon tart, or a soft chocolate cake with crema di mascarpone.
