With their cattle grazing the fields that can be seen from the restaurant, and the kitchen garden now providing fresh produce, the kitchen takes food sourcing seriously, with most of the top-notch produce coming from the Wharfe Valley and nearby ports of Scarborough and Whitby. Dinner may take in monkfish cheeks with girolles, sweetbreads and a deeply-flavoured chervil pannacotta, followed by pigeon with a heart and liver sausage roll and truffled white bean purée, and a well-cooked rhubarb and custard soufflé with liquorice sauce.
